The flavor and texture of all cheesecakes profit by thorough chilling before serving, preferably 24 hours; 48 hours intensifies the cheese flavor and the density of the cake as well. Store cheesecakes, covered, in the refrigerator. Remove an hour or so before serving to bring out the flavor and soften the texture.
